I tried to upgrade to 2.x and Finchley and Edgware and both resulted in compile time and runtime issues respectively. Eventually I would like to get it working with 1.5.x version with Edgware GA versions. Maybe I am not using the right dependencies but I noticed that even trying to replicate [this video] isn't working.

Since you're on Spring Boot: I did it with spring-cloud-stream Kafka Stream -> [this video] done this way, your service will need Kafka at startup, but still serve if Kafka is not available (depends also on your implementation).
